Portuguese Linguica Kale Soup just might be the national dish of Portugal. Linguica is a Calabrian chili with lots of garlic and paprika. In fact, when you cook it the juices are pinkish from the paprika. Not to mention, we all are in need of quick, easy, and tasty recipes that we can make at a moment’s notice. On those busy winter nights when all you are looking for is a hearty robust meal to warm you from the inside out. Nevertheless, this is that dish. Consequently, the soup is beyond flavorful.

Last but not least, there are several varieties of kale. For instance, there is Curly Leaf Kale, Red Kale, Purple Kale, and others. Use any variety.

What is Linguica:

Linguica is a pork smoked sausage. Often filled with Calabrian Chilies, garlic, and paprika. Alternatively, some linguica has wild boar which gives it a slightly different flavor. In any event, many dishes in Portugal have linguica in them. Of course, it can be purchased in a variety of heat levels such as mild to hot.

I highly suggest purchasing Linguica as it is a tasty sausage. However, if it cannot be found Kielbasa, Mexican Chorizo or Spanish Chorizo may be substituted. Linguica can be found at most grocery stores. Amazon carries Portuguese Linguica as well.

Furthermore, garbanzo beans can also be soaked overnight tossing out any discolored or wrinkled beans. In the morning drain the water. Bring three cups to a boil in a pot over medium heat. Boil the beans for 4 minutes. Remove from the heat. Cover the beans and allow them to soak for two hours before using the soup recipe below.

  • 1/2 cup of chopped onions
  • 4 Cloves of garlic
  • 1 lb Linguica(hickory-smoked Portuguese sausage or Chourico)
  • 2 cups diced potatoes
  • 1/2 cup diced parsnips
  • 1/4 tsp smoked paprika
  • 2 bay fresh or dried leaves
  • 1 14.5 oz can of diced fire-roasted tomatoes
  • 1 15 oz can garbanzo beans
  • 2 cups of chicken broth or homemade chicken broth
  • 4 cups of water
  • 1 bunch of chopped kale
  • salt and pepper to taste

Directions:

First and foremost, heat up the olive oil over medium heat in a large pot. Second, add the onions, garlic, potatoes, parsnips, and chopped sausage to the pan and cook until the onion is translucent.   • 1/2 cup of chopped onions
  • 4 whole minced cloves
  • 1 lb. Linguicia
  • 2 cups of diced potatoes
  • 1/2 cup chopped parsnip
  • 1/4 tsp smoked paprika
  • 2 whole fresh or dried bay leaves
  • 1 14.5 oz. can of fire-roasted tomatoes
  • 1 15 oz. can of garbanzo beans also known as chickpeas
  • 2 cups of chicken broth
  • 4 cups of water
  • 1 bunch of kale chopped finely
  • 1 tsp salt and pepper to taste

Instructions

  • First and foremost, heat up the olive oil over medium heat in a large pot.
