I’m reposting this scrumptious little appetizer recipe, because when you need something quick and fresh-tasting (and healthy), these simple ingredients are easy to keep on hand.

Your guests will love it – they’ll actually love you! :)

Recipe: Apricots and Goat Cheese Bites {ReluctantEntertainer.com}

Summary: Makes about 20 bites. I always double the recipe.

Ingredients

  • 2 oz. goat cheese at room temperature
  • 1 tsp. milk or cream
  • 20 dried apricots (preferably from Trader Joe’s for the best flavor and tartness)
  • 20 almonds
  • 1-2 tsp. honey

Instructions

  1. Place the apricots on a platter.
  2. Mix the goat cheese and milk or cream until smooth.
  3. Put a spoonful on each apricot.
  4. Top with a whole almond.
  5. Drizzle with honey.

Preparation time: 5 minute(s)

Number of servings (yield): 6

    Sandy,

    I have not used goat cheese very often. Are there different varieties with different tastes? Is there a brand(s) you prefer? Just want to know what I am looking for when I go to the grocery store. The recipe looks delicious and I may have to make a batch just for me!

    Hi Sandy,

    These look delicious…and they are that perfect sort of appetizer/dessert when we are waiting for all the delicious fresh fruits of spring and summer. Everyone always seems to have dried fruit on hand and this looks like it will come together in a flash.

    Thanks so much for re-sharing this. I didn’t remember it from last time. My folks are going to stop by in about an hour and a half…just a quick visit to say hi to Ben as he is recuperating (the wisdom teeth…ouch). I was thinking about what would be nice to serve to them – just a little snack with some coffee – and this will be perfect…as I just bought some goat cheese the other day! :-)

    There are 10 babies on the way at my church this year and it has been one baby shower after another! This is definitely going on my list of easy but delicious appetizers for showers (right alongside your roasted strawberry crostini). I might have to try these for dinner tonight…

    I like to keep some spiced nuts ready and some dried apricots – they work well with most cheeses. Also like to keep fig preserve to dress up a small cheese tray which just takes it up a notch from cheese n crackers.
